The rind is believed to have contained extremely high levels of pomegranate tannin punicalagin which will boost the antioxidant content of the juice.

You will love eating your pomegranates in this refreshing, antioxidant rich, detoxing salad. This salad is the epitome of clean eating, is easy to make, and each ingredient is a nutrient powerhouse.

It is perfect as a side dish to hearty meats, and roasts, and seamlessly fits into popular diets such as Paleo and Whole30.

Ingredients:

1/2 Cup Pomegranate Seeds/Arils

1/2 Cup Chopped Green Lettuce (Not Kale)

1/4 Cup Chopped Fresh Mint Leaves

1/2 Avocado, Diced

1 TSP White Vinegar

Salt & Pepper

Directions:

Add Pomegranates, chopped lettuce, chopped mint leaves, diced avocado, and white vinegar into a mixing bowl. Mix well. Add salt and pepper to taste. This salad can be made a few hours ahead of time and kept in the refrigerator.

Health Benefits of this Salad

Avocados is another superfood with a wide range of vitamins and provides the creaminess and fat to this dish.

The vinegar also helps to increase digestion, whilst fresh mint leaves are not only packed with nutrients but also relieves indigestion.

Green lettuce will provide vitamins such vitamin K, Vitamin A, and Vitamin C, as well as nutrients such as calcium, fiber, folate, antioxidants, and phytonutrients.
